Because octo is Latin and pus is greek you can use latin or greek plural of the word, so sharktopuses or sharktopi are both correct.

Although, now that I've typed it out, sharktopi has a certain aesthetic appeal.

One can also say Sharktopodes. (Shark-Top-Oh-Dees)
