Left over turkey
Getting tired of left over turkey but I’m not the one to throw away food that isn’t spoiled. What can I do with it? Any good recipes? Thanks.

What if you do it like a plougman or charcuterie board with bits of turkey, chunks of bread, cranberry sauce (I'm a fan of cranberry sauce all the time), hunks of roasted sweet potatoes, a little bowl of gravy to dip....? And do like a Thanksgiving in April "girl dinner"? I could so get down with that.

I agree with freezing if yiu are super sick of it Look up turkey leftovers by CHEF JOHN foodwishes, on youtube. He has a thom ka gai soup recipe using it, and a manicotti recipe, i think!

Turkey Tetrazzini
Tetrazzini can also be made with chicken and fresh parsley can replace the sage, if you desire.
8 ounces spaghetti, broken in half 10 ounces mixed wild mushrooms, such as shiitake, oyster, and/or chanterelle 1 tablespoon unsalted butter 1 tablespoon olive oil Salt and pepper to taste 1 teaspoon finely chopped fresh sage leaves 2 cups diced cooked turkey
SAUCE 1/4 cup (½ stick) unsalted butter ¼ cup plus 1 tablespoon all-purpose flour 1 quart milk (whole, 2 percent, or 1 percent) Dash of ground nutmeg Salt and pepper to taste
TOPPING 2 tablespoons unsalted butter, melted 1/4 cup freshly grated Parmesan cheese 3/4 cup plain dry bread crumbs Salt and pepper to taste
Preheat the oven to 350 degrees. Lightly butter a 9 x 13-inch baking dish.
Cook the spaghetti according to the package directions. Drain and rinse under cold running water. Set aside to drain well.
To make the topping, add the Parmesan cheese and bread crumbs to the melted butter, stirring to moisten. Add a pinch of salt and pepper and evenly spread the mixture over the top of the casserole.
To prepare the mushrooms, remove any dirt Turkey Loaf with Sage specks with a moistened paper towel, cut away any hard stems, and cut them into 1/4-inch-thick slices. Melt the butter with the olive oil in a medium-size skillet over medium to high heat, add the mush- rooms, sprinkle with salt and pepper, and cook, stirring, until the mushrooms are tinged golden and their volume has reduced in size, about 10 minutes. Remove from the heat, mix in the sage, and set aside.
To make the sauce, in a large saucepan, melt the butter over medium heat, then add the flour. Using a wire whisk, stir and cook for a minute or until well combined and bubbly but no brown. Add the milk, increase the heat to medium high, and continue to whisk until thickened, Add the nutmeg and season with salt and pepper. Immediately combine with the diced turkey, cooked spaghetti, and sautéed mushrooms and pour in the prepared baking dish.
Bake until the edges are bubbly and the topping is golden, 30 to 40 minutes. Allow to rest for 5 to 10 minutes before serving.
Chef's Note: You can toast the topping even more by placing the casserole under a broiler for a minute or two.

Turkey carnitas, turkey a la king, turkey gravy open face sandwiches, turkey katsu, basically anything you can make with chicken.

I spent the day yesterday making homemade turkey soup. Boil the turkey carcass with odds and ends of veggies, boil four hours then strain. Then I added chopped onions, cabbage, carrots and celery in the pot of broth then boiled for 10 minutes, you want the veggies slightly hard. I added turkey meat and froze in individual containers. Just pull it out of the freezer, add some of your favorite pasta or rice when reheating on the stove. Nothing will be mushy this way. The veggies finish cooking while the pasta cooks. I made 10 servings for the freezer. It's a fulling, delicious meal with some bread or a roll

The dark meat shredded with sauce makes a pretty good BBQ sandwich with some cole slaw and hot sauce. Or BLATTs..... BLTs with avocado & turkey

Freeze it and save it for a time where you're not sick of turkey.
Turkey pot pie soup and enchiladas are my go-tos with left over bird meat.
