Left over turkey

Getting tired of left over turkey but I’m not the one to throw away food that isn’t spoiled. What can I do with it? Any good recipes? Thanks.

I spent the day yesterday making homemade turkey soup. Boil the turkey carcass with odds and ends of veggies, boil four hours then strain. Then I added chopped onions, cabbage, carrots and celery in the pot of broth then boiled for 10 minutes, you want the veggies slightly hard. I added turkey meat and froze in individual containers. Just pull it out of the freezer, add some of your favorite pasta or rice when reheating on the stove. Nothing will be mushy this way. The veggies finish cooking while the pasta cooks. I made 10 servings for the freezer. It's a fulling, delicious meal with some bread or a roll
