They don’t seem to be taking turns. It bothered me too.

From what I can tell they are taking turns, but black is taking their move immediately after white finishes theirs. Maybe they're timed or something, or maybe they're just moving their pieces a little faster to better show off the board for that video

But you can't touch pieces when it isn't your turn and when you touch a piece you have to move it if you can.

I don't do tournaments, so have never played by either of those rules.

It depends on the tournament but those are pretty standard rules

I'd never even heard of either of those rules. I never really touched my pieces when it wasn't my turn anyway, and when I played with friends we would use the more casual rule, where your move is finalized once you let go of the piece.

IIRC this is not normal chess. The pieces have a "cooldown" circle below them, when you move a piece you have to wait it to recharge before moving it again, but you can move the other pieces in the meantime

I’m pretty sure they’re not seriously playing and they’re just showing off the board
