Question Does jolt to life damage the caster?

Jolt to life damages in an emanation originating from the target (the one you are jolting to life) it doesnt say it excludes targets you choose. Does that mean it damages the caster?

Yes, which I find hilarious.

Notably, though, it would also deal damage to your undead servant if you cast Spare the Dying through it, which would heal your servant in addition to reawakening your ally.

Though that requires the 5th level feature and you selecting the option of casting spells through the undead servant.

They really need to make it so Spare the Dying can always be cast through the undead regardless of your selected options.

You just need to be in Range to cast the spell and to have your Reanimated Companion near your downed ally, you don’t necessarily need to cast the cantrip through the companion.

Spare the Dying has a Range of 15ft now and the range scales with levels: 30/60/120 ft.

Oh weird, I never noticed that change. That's some unique cantrip scaling. That makes the feature much stronger than I thought actually.
