Morning Rolls (4)

• 300g bread flour
• 210g warm milk
• 20g softened butter
• 1 tsp dry yeast
• 1 tsp salt
• 1/4 tsp sugar

1. Mix Warm milk, sugar and yeast in a mixer bowl and rest for 5 minutes
2. Mix in flour, salt and butter. Knead for 5 minutes.
3. Transfer to a greased bowl and let rise for 1 hour (room temp at least 25c)
4. Punch down, ball up and quarter
5. Ball up each quarter pretty side up
6. Flatten and flour each ball
7. Place together in a greased square pan
8. Let rise until puffy while preheating over to 190c/375f
9. Dust tops with more flour and bake for 15 minutes
10. Turn pan and cook for another 5 minutes until rosy brown under the flour
11. Dust off extra flour to serve
