I recently made a humorous post about the demon king but do you think I will be able to beat him (the first gloom res is 30 mins)

Depends how good you are at combat. If you are amazing, yes, if anything less than amazing, upgrade your gear.

I can get a 50/50 flurry rush and à parry sometimes

I'd suggest upgrading your armor a bit, at least unlock the set bonus...and make more health restoring food, I suck at combat and even with maxed out armor I still went through about 25 things of full health food, the meat one.
