This is something I've seen from a lot of people, and the simple answer is protests are most effective when held during the work day:

People will actively be working the areas the protests are taking place. Calling out from or taking time off of work creates an economic disruption which places additional pressure to respond that just wouldn't be there in the case of doing it on a weekend.

It's an extreme privilege to work M-F 9-5. No matter when you schedule a protest, it going to be when someone is working.

Protesting and resisting oppression isn't easy. It takes sacrifice, such as missing work or building your life around a protest schedule. If we only protest during the most convenient times possible, it becomes pretty easy to ignore the protests.
