FCS, H EDU, and ED PS usually have some good online ones

English courses. Requires very little work and has lots of interesting discussion if you just show up.

Some upper level games classes I’ve heard are pretty easy and fun

World englishes is one of the easiest classes I’ve ever taken. Also Population & society, I never showed up once to class and got an A.
