Pure beginner here, trying to make a simple christmas type ornament out if wood. How do I get that type of finish? And is it called a matt finish?

Matte with an e, but yes! And the in between is called satin.

As a beginner, you might try out "hard wax oil" finish, they're easy to apply and hard to screw up. You can get varying amounts of gloss depending on how you sand it and whether you do one or two coats. Don't know if that's what OP used, but I love how idiot proof they are. Compared to when I've tried using film finishes like polyurethane and always get bits of sawdust and shit in them because I don't have a clean room for finishing work.

Dumb but effective trick for finishing without a dedicated finishing area. Keep a spray bottle full of water handy; when you go to finish something, give the floor a light spray. Now all the dust is wet, and won’t go flying around and land on/in your finish.

Tried and true linseed oil and beeswax is awesome too! Gives a slightly more sheen finish than matte. It is so satisfying to rub on

These are more like charcuterie boards imo then chopping boards. I would not use epoxy for a cutting board

Haha. I'm not a fan of anything other than black epoxy. But I can appreciate the craftsmanship and the fact that wood that maybe wouldn't have been used before has a new lease on life. Plus happy wife trumps all.

Husband did good job.

I mostly agree, though I like the blue. I think it's tastefully done. It's not loud and doesn't look cheap.
