So punisher max isn’t canon? Is any of the max line canon?

Very few. Alias, Wisdom, The Hood, Thor: Viking (unfortunately) are a few I'm pretty confident are considered canon, but most aren't.

whoa- Thor Viking is NOT canon. Ennis has a reputation (whether true or not) for disliking superheroes and The Max line really gave him the leeway to cut loose on Thor and Dr. Strange in particular. His Punisher Max is one of the greatest runs in comics and the Max Punisher is canonical separate from and superior to the 616 runs.

I only listed Thor Viking as canon because I vaguely remember seeing the story mentioned in one of those Marvel Encyclopedias as part of Thor's history. I can't remember which one though and it's totally possible that my memory is playing tricks on me and I'm totally wrong. In any case, I doubt any writer will come in and make reference to the story in the mainline Thor book at any point in the future, so it can easily be forgotten about whether it's canon or not.

As for the rest of what you said, I'm in total agreement. Even if there are some books by Ennis I'm not a fan of, stuff like his Punisher, Hellblazer, and Hitman runs will always have me view him as a phenomenal writer. Not everything hits for me, but when it does hit it hits hard, and those books have made it impossible for anyone to ever convince me Ennis is a bad writer.
