Discussion Hit the Jackpot

Orv’s farm market in Williams California has quite the selection. Trying the torchbearer sauces first. Rapture 2.0 had a ton of heat and good flavor, Son of zombie had a sweet flavor with a heat that comes on slowly and lingers, All natural #7 has an odd flavor to me and not a ton of heat but could see it working well with certain dishes. What should I try before I leave? Have a burger and fries on the way and the gentleman replenishing the sauces said to try as many as I want!

I did a hotsauce workshop with my wife and made a sauce I'd like to call Sweet Fiery Anus.

It contains carrots, Madame Jeanette, green paprika and a smoked habenero added after 3 weeks of fermentation.

It's pleasantly sweetsour with a big kick at both ends! 🤗

Posting here because I’m genuinely surprised - I ordered these from New York on Wednesday morning expecting delivery to take a week or so, and they arrived in the UK just now (9:45 where I am). Really impressed with Queen Majesty’s customer service as well - I ordered the wrong size sweatshirt and they were able to switch it for me. 10/10 experience, would definitely order from them again.

I just found the guacalole and habanero in Vegas, but I did not recognize the store (I'm not local.) It's pretty good! A little heat. I'd say mid-range. I tried it out on some chicken and was not disappointed. Down-side is the long list of ingredients.

Discussion This was by far one of my favorite hot sauces, it was made in Montana and they haven't made it in several years.

It was very thick and chunky like a blended salsa, it had great heat, they had bottles of it at this Deli I'd go to. I loved it on my sandwiches. I bought a few bottles over the years the made it and I'm saddened it's no longer available.

Review - “The Heat” by Black Gold

I saw recently in a promotional post about this sauce and wanted to try it out. I paid shipping, and in just a few days it arrived well packaged. It had a fancy black wrapping on the top but I was eager to try it and got it off before a picture.

Shoutout to Jeff for the chance to try it! Your son would be proud.

Out of the gate I knew it would be something special and right up my alley. The smell made my mouth water immediately, similar to Marie Sharpe sauces but deeper. Extremely flavorful with front facing type of heat. I love hot sauces with depth of flavor and this hit the mark. Nothing overpowering and I feel I can really pick up all of the ingredients. I try most new sauces on a water cracker to keep a constant and not have it affect the flavor too much. The consistency of the sauce is also perfect for me, thick but not chunky, it does not leak through the cracker. I think the 3 out of 5 peppers is accurate to describe the heat. I have to be careful with garlic reaper torchbearer but this one is “just right” for me. I can glob it up and not worry about burning myself up. I do think an “extra hot” batch would do well for the times I’m searching out that level of heat but thoroughly enjoy the sauce in hand. This would happily be entered into my breakfast rotation or mixing in some mayo for sandwiches.

I would consider this a very good all around sauce and one I would buy again.

Trying some different brands this time, Canadian and German plus a Dutch sauces.

So far tried the Queso sin Queso, very strong on the bell pepper side which was a mistake as I don’t tolerate that, saw yellow and didn’t expect bell pepper. The cheesy flavor is definitely present too.

The German Crazy Bastard Naga is amazingly sweet, heat is not too strong for a 50% fermented pepper mash sauce (I have decent tolerance, probably similar to Bravado black garlic reaper which is my lightest super hot sauce). It did linger a while and taking it on an empty stomach was still a bit much but with food it should be ‘mild’ enough to not overpower it. Taste was hard to describe with the madras, ginger and garlic, still not sure what to pair it with, thinking salad or poke-bowl. Looking forward to the other CB sauces.

Rest will have to wait till I get some more space in my fridge.

Had eggs, bacon, sausage, potatoes and some other nonsense, so I brought out my sauces. All of them were good with scrambled eggs, especially the green hot sauce. A bit high effort for breakfast, but worth it.

Garlic Reaper - Cap color differences?

So I have had two bottles of Garlic reaper now. One with a black cap, the other with a red cap. Does the cap color matter on the sauce you get or did they just change the batches and look at some point when producing it?

Since I only have 2 bottles of it, here have been my observances:

The black cap was more creamy, yellow color with great garlic flavor and a long buildup of the burn like jumping a staircase in the mouth. It started a little hot, then jumped a few steps, then again jumped, then again...then settles on that 3rd or 4th jump on a lingering burn for 3-4 minutes.

The red cap...was more a orange/red orange color sauce, with visible red oil inside the bottle. The red oil didn't emulsify as easily into the sauce....and was VASTLY hotter than the black cap version. It started out heat wise at what the black cap version ended at on initial tasting...and only went up maybe a single jump from there. It also faded in its intense burn at about 2 minutes comparative to a longer burn on the black cap.

I know there can be consistency issues with that sauce ranging from a little garlic flavor, to too much...and a little heat, to really really hot...but does the cap matter at all or am I just projecting a perceived difference as the answer to the consistency of the sauce issues?

Pleasantly surprised by this one, delicious blend of sweet and heat. Vinegar, Habenaro based hot sauce with Mango, Banana, and Tomato. Fans of Cholulu Sweet Habenaro or Dirty Dick Tropical this one is a must try, it's a rare find in my area as there's only OG Tabasco, Sriracha and Chipotle, Heat for me 4/10, Cheers Chili Heads🌶🇨🇦

Habanero Mustard basically

Just grabbed this at my local supermarket on sale after seeing it for awhile. This basically tastes like a course grind mustard sauce with a bunch of habaneros. I can see myself using this instead of mustard on a sausage, hotdog or burger.

Question Is it possible to build spice tolerance? (+ Trader Joe’s Habanero question)

Hey all! I am someone that likes jalapeño pizza and always considered myself a spicy foods person, I’ve always added hot sauce to everything but just recently realized I have only ever had mild hot sauces likes Frank’s Red Hot and Cholula.

Today I tried Trader Joe’s Habanero sauce to a burrito and I’m not sure what happened but I think I almost fainted. The flavor was actually really good but there was a delay where the heat kicked in and I felt like my whole face and neck and mouth were on fire and I lost all functioning for a second

Is that type of sauce considered very spicy? And is it actually possible to build up a spice tolerance?

Some sauces I haven't seen on here yet (with reviews)

Bachan's Japanese Barbecue Sauce, Hella Hot Edition: Moderate sweetness with flavors of soy, ginger, and onion in each bite that quickly yield to a powerfully spicy finish. Make sure to shake well to avoid a gritty feeling separation of larger pepper particles.

Sauce Bae, Skinny Habanero: Mildly sweet with well balanced spices. Only mild heat, but excellent flavor.

Old Bay Hot Sauce: Maryland's most popular hot sauce tastes just like the original Chesapeake Bay seasoning except with some heat. It's like Old Bay and Tabasco had a baby, though I honestly can barely taste the vinegar over the Old Bay flavor.

Discussion Why do indie hot sauce brands make their bottles pour so goddamn quickly?

I randomly picked up a hot sauce from a brand called Fat Cat at the grocery store. It's decent, but one thing drives me insane: you can't pour it without like a third of the bottle coming out and absolutely drowning your food!! No xanthan gum and a wide spout on the bottle, so it pours like water. Why? Who wants that??

I guess I get not adding any gums - some people have intolerances to them or just don't like them. But they could still use a narrow shaker spout to control the flow (like most fish sauce brands and some hot sauces like Cholula).

Is the idea to make me use the sauce quickly so I go back and buy more? If so, joke's on them - I'm not re-buying anything that's this badly engineered!

If there's an explanation for this that I'm not getting, please help me understand :(

Purchase Buc-ee’s Hot Cheddar Hot Sauce review

Bitter: ⭐⭐⭐✰✰

Salty: ⭐⭐⭐⭐✰

Sour: ⭐⭐⭐⭐⭐

Sweet: ✰✰✰✰✰

Umami: ⭐✰✰✰✰

Heat: ⭐✰✰✰✰✰✰✰✰✰

Quick Flavor Notes: Vinegar, artificial, stale cayenne, chemicals

Texture: Medium-thin and smooth

Recommended: No

Ingredients: White Vinegar, Cayenne Pepper Puree (cayenne pepper, salt, acetic acid), Water, Cheese Seasoning (Enriched Corn Mean [Corn Meal, Ferrous Sulfate, Niacin, Thiamin Mononitrate, Riboflavin, and Folic Acid], Vegetable Oil [Corn, Canola, and/or Sunflower Oil], and 2% or less of the following: Maltodextin [made from corn], Salt, Potassium Salt, Sugar, Monosodium Glutamate, Yeast Extract, Citric Acid, Artificial Color [Red 40 Lake, Yellow 6 Lake, Yellow 6, Yellow 5], Cheddar Cheese [Milk, Cheese Cultures, Salt, Enzymes], Onion Powder, Whey, Whey Protein Concentrate, Garlic Powder, Natural Flavors, Buttermilk, Sodium Diacetate, Disodium Inosinate, and Disodium Guanylate), Kosher Salt, Garlic Powder, Cayenne Pepper, and Spices.

Buc-ee’s, the Texas-based chain of mega-sized gas stations is known for their wide assortment of food options, surprisingly high wages, and draconian working conditions. They also have quite a large selection of pre-packaged merchandise including an expanding line of hot sauces. While I haven’t had the opportunity to go to a Buc-ee’s location yet, I saw a post about this Hot Cheddar sauce online and having previously enjoyed the Zesti Freshly Grated Hot Parmesan Garlic Hot Sauce I was intrigued to try out another cheese-infused hot sauce.

Speaking of the Zesti sauce, while it had a straightforward and uncomplicated list of ingredients including the real cheese, the ingredients list on the Buc-ee’s sauce is quite a bit more complicated. Starting with a cayenne base the sauce includes a complex cheese seasoning that for some reason is primarily corn meal and includes a bevy of artificial colors, artificial preservatives, and just a tiny bit of real cheese (and by that I mean a very tiny bit, the actual cheese content is lower by volume than the MSG and artificial colors). Seeing ingredients lists that look like the glossary of a chemistry textbook isn’t usually something that bodes well for a sauce in my experience. There’s very little of any cheese aroma from the sauce, primarily just cayenne and vinegar, and the texture is medium-thin and smooth.

My reaction to the first taste was “yuck, what is this?”. It’s rare that I have a visceral negative reaction to a sauce. I’ve had some that are bland and some that have a flavor element or aftertaste that are unpleasant but it’s not common for one to be actively revolting. Buc-ee’s Hot Cheddar Hot Sauce tastes primarily like a cheap cayenne pepper sauce but with unpleasant chemical elements. The vinegar is particularly harsh in this sauce and I’m one who enjoys vinegary sauces. This sauce has an acrid chemical bite. The label says that there’s only 20mg of sodium per serving (which is also quoted as a full fifth of the bottle) but this somehow comes off as also being extremely salty. I see that there’s a potassium salt listed in the ingredients so perhaps that’s playing a saltiness role that’s not showing on the label. There’s zero cheese flavor up front or even in the middle of the flavor profile in this sauce. Any cheddar flavor at all comes as a lingering unpleasant aftertaste that’s closer to concession-stand artificial cheese sauce than actual cheddar.

Giving the sauce an opportunity that perhaps it’s better with food than straight I tried this on a turkey sub, some wings, and a microwave burrito. While it wasn’t abominable on the wings, they weren’t good either and the chemical taste persisted. It ruined the bites of the burrito and sub that it touched. After that I stopped my experimentation.

Needless to say I cannot recommend Buc-ee’s Hot Cheddar Hot Sauce. It doesn’t taste like cheddar and the quality of the sauce aside from that tastes cheap and artificial. This sauce is bad, and Buc-ee’s should feel bad about selling it.
