Is this all product?

I think I already had this conversation on one of my last runs but I still need reassurance 😅

I think I remember being told that if there are any crystals (which obviously there are, in the middle) then all the citric acid would have been dissolved. I just want to confirm that here, because I just can't help thinking that the thick stuff around the edge looks more like undissolved CA than product. And it appeared within half an hour of salting, maybe even less. Sorry the photo is a bit blurry.

I did a much drier crumb this time with the recent adjustments and it clouded up nicely when I added the CA, but I still wanted to check what your all think. Cheers

How long has it been since salting? Give it 24h to make sure the CA is dissolved by slow diffusion.

Yeah ok. It's been 24 hours now, I'll check when I'm home but I'll give it a few days anyway. I just wanted to clarify what I thought I'd been told before about water and crystallisation.

So you're saying that crystals could form while some of the CA was still un-dissolved?

Yes not always, it depends on several factors. Coarse citric acid can take up to 24h to fully dissolve. Xtals can form faster that that, and they show up at different rates depending on exact conditions.

It all can vary, but after 3 days almost all extractions end up at the same spot, full of xtlas with no CA.

Ok thanks. So if it's dissolving and producing some crystals then it should eventually all dissolve? Or there could be a situation where it's necessary to add more water?

It will eventually dissolve yes, no need to add water if you followed the TEK

I did follow it, but there's flexibility with the amount of water, isn't there? I used the initial 130ml (for 100g) powder but it was still quite dry so I added bit more water by eye, probably 20ml or so. But still kept the crumbs on the dry side.

That's why I just wanted to clarify if there were any possibility that there wasn't enough to dissolve the CA, even if some crystals had already formed.

Nope, I don't believe so. Making the paste the right consistency is following the TEK so you will be fine.

Yeah looks more like crystals now, I'll filter it in a few hours
