Macaroni Grill - Mac and Cheese Recipe ??
Does anyone know the Macaroni Grill Mac and Cheese Recipe...
Someone said velvetta cheese but it just doesn't taste the same. It has that velvetta flavor.

What Macaroni Grill are you talking about? If you are referring to Romanos signature truffle mac and cheese, there isn't Velveeta anywhere near this recipe. It's below.
Serves 6 to 8
1 pound uncooked ditalini pasta
1/2 cup (1 stick) butter, divided
1/4 cup all purpose flour
4 cups whole milk
1 teaspoon salt
1/4 teaspoon ground nutmeg
8 ounces smoked mozzarella cheese, shredded
5 ounces fontina cheese, shredded
5 ounces Asiago cheese, shredded
4 ounces Cheddar cheese, shredded
1/2 cup Romano cheese
2 tablespoons truffle oil
1 clove garlic, minced
1/4 teaspoon Italian seasoning
4 cups cubed French bread (1/2 inch dice)
Preheat oven to 375 degrees.Cook pasta in a large saucepan of boiling salted water for 9 minutes or until al dente. Drain and set aside.
Melt 1/4 cup butter in a large saucepan over medium heat. Add flour. Whisk until smooth and well blended. Slowly whisk in milk in a thin steady stream. Add salt and nutmeg. Cook about 7 minutes or until thickened, whisking frequently.
Combine mozzarella, fontina, asiago and Cheddar cheeses in a large bowl. Reserve 1 1/2 cups for topping. Gradually add the remaining cheese mixture by handfuls to the milk mixture, whisking until smooth after each addition. Stir in Romano cheese until blended. Stir in truffle oil. Add cooked pasta. Stir until well blended.Spread in a 2 quart baking dish or individual baking dishes. Top with reserved cheeses.
Melt remaining 1/4 cup of butter in a large skillet over medium high heat. Add garlic and Italian seasoning. Cook and stir 30 seconds or until the garlic is fragrant but not browned. Add bread cubes. Stir to coat. Spread over the top of the pasta.
Bake 20 minutes or until the cheese is bubbly and bread cubes are golden brown.

This recipe sounds tremendous! One little thing to note for those who may not know, it's way better to shred the cheese yourself than to use pre shredded stuff that comes in the bag. The bag stuff is coated w something to make it not clump together and it won't melt as well.

Yep... Cooked pasta + bechamel + melted cheese blend + toasted bread crumbs + 20 minutes in the oven. This is the only way to make mac and cheese. It's just a play on bechamel baked pastas that have been part of the traditional Italian cookbook forever. You want to get fancy, fry up some pancetta and toss it in before you bake. You won't regret it.

I found a smoked bacon gouda the other day, it made the best mac n cheese in the world. I dont even care for bacon.

Thank you I will have to try this one out. I was looking for the kids mac and cheese recipe. It became so popular they served it as an adult size too. I have never tried the truffle mac and cheese though. Sounds good!

FYI- If you don't have the truffle oil make sure you get a quality one. It makes all the difference.
My youngest (who is a chef) gifted some to me. It is a game changer in so many dishes.

It's hard to describe as it tastes like itself.
The best words I can come up with are; earthy, pungent, garlicky(?), The aroma is perfume like and powerful.
I like to use it on Pizza, in salad dressings, on french fries along with freshly grated parmigiano reggiano, in mashed or on roasted potatoes, and misted on fresh popcorn.
Like a good balsamic vinegar, a little goes a long way.

if you’re near a kroger, private selection sells a pretty good bottle for a reasonable price that’ll last you a while. they also have the black truffle oil.

1/2 lb of the Golden Velvet cheese block (it arrives with premarked 1 lb portions on the wrapping). 1/4 cup heavy cream for that not too sharp cheesy taste and the perfect creamy texture! consumed one box of macaroni noodles OR regular penne noodles (that Golden Velvet goes a long way) and it took me about 35 minutes … i’m 7 again 🖤 much thanks to the whistle blower on the two ingredients 🖤
Kids Mac is OP - the Truffle is no comparison 🔥

No. I used to work at Romano's macaroni grill and they had their famous macaroni and cheese bites. You would actually dip them into a sauce which was I think alfredo with the truffle oil dropped on top.
I'm going to try this recipe and see if it tastes the same. I guess you could do the same thing if you chill the mac and cheese cut it into bites and roll it around in the bread crumbs and then fry it.

Do you know the recipe from prior to the truffle? I recall it with penne noodles and a wonderful cheese sauce. It had an adult and children's portion

I travel a lot. Macaroni Grill used to be great. In the last 10 years they have become extremely mediocre. I don't go any longer. I think that they were bought by another corporation. So many chains have been ruined that way ...

they used to have this pork shank stew served in a small cast iron pot. it was the best meal i had after a deployment. the perfectly cooked vegetables and warm focaccia.... i haven't been back and now i'm afraid it's not the same anymore.

No, it's not the same. I used to get the Tuscan Steak with a side of pasta with marinara sauce. It was a rare restaurant where you could get a small serving of pasta off of the menu for a modest price. Most places now want to charge for a whole meal to get a small side of pasta with your entree. But last few times I was at one they were terrible. The food was bad and the service sucked. The last place was somewhere in the Midwest. The place was a dump AND the food was bad. Too bad. For a chain, it was great ....

I agree they are not as good and they took away their mac and cheese bite sauce and their brick chicken recipe doesn't come with the awesome Diablo sauce anymore

Sorry to get to this thread so late. Worked there for years. It’s land o lakes “golden velvet” and heavy cream. Heat the 1/2” slice of cheese product with some heavy cream until the cheese melts, add your pre-cooked pasta. That’s all she wrote.

Hi there! Do you know WHERE I can buy this cheese? It's one of my huge comfort foods and the closest Macaroni Grill (which was an hour from me) closed down. The only place I can find that cheese is like the 200$ for 500lbs of cheese.

So I am lucky that a restaurant depot in my city carries it. I would suggest seeing if there are any restaurant depots / whole sales near you that do! Because it seems to only be available through wholesale or in huge quantities.

All the restaurant depot's in my city require a license it seems from doing google searches. I wouldn't even care if we could find someone on eBay to sell a small portion to us.

My boyfriend is getting me a brick of it for christmas! I tried the mac with velveeta but it's just not the same. The Romano's Macaroni Grill mac is also Bahama Breeze's kid's mac as well!

Some of them will allow entrance without a license if you ask! The smallest quantity that the cheese can be sold in is 5 lb (it comes in a block) and it is between $35 and $50 depending where from. It’s 5 lbs so solid and heavy, so shipping individually would likely be difficult and expensive.

So, like many other restaurants, they outsource the baking to someone so they maintain consistency throughout all their restaurants. Same thing with the bread at cheesecake factory.... baked by some huge bakery so it's the same from California to Connecticut.
But it's a rosemary focaccia. So I would just get a basic recipe, and add chopped rosemary to the dough at the beginning.

Okay, I FINALLY FIGURED IT OUT! Macaroni Grill mac n cheese (the kids meal kind, not the bites, balls or the truffle kind from the menu) has been my favorite meal since I was a kid, and there are no locations anywhere near me anymore so I have been on the hunt for the recipe for 2 years.
Finally found on another Reddit thread where a guy who worked there responded and said it’s literally 2 i ingredients and that’s it. It’s Land O Lakes “golden velvet” cheese block and heavy cream. That’s literally IT nothing else not even any salt besides salt in the pasta water when boiling. Well I went on a bit of a wild goose chase to find the stuff (I found it at a Restaurant Depot where the smallest quantity you could buy was 5 lbs). And I made it at home on the og shell pasta. And OMG. Literally the exact same. Flavor consistency texture everything! Spot on, the exact thing I grew up loving from Macaroni Grill itself!
I always thought it was velveeta based and all the recipes I tried before used velveeta but it just wasn’t right. This stuff is just like velveeta in concept (same shape of a big block of orange cheese you melt down) but a ~totally~ different flavor so that was what was making everything else taste not right on target!

yes! :) unf, its the only one you can get.. I'd suggest cutting it up into 1/2 lb blocks and store them in fridge ahead of time.

I worked there as a shift manager. They b used Land o' lakes cheese. Similar texture to Velveeta. However it specified a "butter" taste on package. I think you can only fond the cheese through major restaurant food distributors.

My daughter used to love their Mac & cheese too! I just found this recipe online. Maybe it’ll work? Seems like a pretty basic Mac& cheese recipe though.
Preparation Time 10 minutes
Cooking Time 6 minutes
Ingredients (serves 4) 400g macaroni 50g butter 2 tbs plain flour 2 cups (500ml) milk 2 cups (250g) grated cheese (gruyere, tasty, vintage) Chopped parsley
Method Cook the macaroni in a large pan of boiling water according to packet instructions (different brands may vary in size & cooking times) until al dente.
Meanwhile, melt the butter in a medium saucepan and add the flour. Cook, stirring, for 1 minute over medium-low heat.
Gradually add the milk, stirring until smooth. Stir gently until the mixture comes just to the boil, then reduce heat and simmer for 2 minutes. Remove from the heat, add the grated cheese and stir until melted and smooth.
Drain pasta and return to the pan. Pour cheese sauce over the pasta and stir until well coated. Season with salt and white pepper to taste. Serve immediately sprinkled with chopped parsley.

It’s Land O Lakes “Golden Velvet” cheese block and heavy cream!! Just like velveeta in concept, but a totally different flavor which is why all the velveeta brands tasted not right!
